  • 1 pint cremini or button mushrooms, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp thyme
  • 1/4 cup flour
  • 1/4 cup vegan margarine
  • 1 litre vegetable stock (or to taste)


  • Make a roux by melting 1/4 cup vegan margarine.
  • Once melted, add garlic and thyme and sauté for 30 seconds.
  • Add in flour and cook for 1 minute, stirring regularly.
  • Add mushrooms and cook until they release water.
  • Gradually add brother until desired thickness is achieved.
  • Enjoy on loaves, potatoes, etc.!
